Add potato, carrot and onion to a pot with boiling water and simmer until softened
Meanwhile cook the pasta following the packet instructions
Separate the vegetables from the liquid and place in a blender (save the liquid they were cooked in)
Add in ¼ cup of the vegetable cooking liquid, vegan cheese, pepper, salt, garlic powder and olive oil to the blender and blend until the mixture reaches a smooth, creamy consistency
Add the cheese sauce to the drained macaroni pasta
Season with salt and pepper to taste and any extra vegan cheese
